I am at a loss for words today, so I am sharing a recipe for pork chops that I made last night for dinner. This is simple and delicious.

Sweet Pototoes
  1. Melt the oil in a cast iron skillet over medium heat.
  2. Add the sweet potatoes, sprinkle with salt and pepper.
  3. Cook for approximately 10 minutes, stirring occasionally until done and brown around the edges.
Pork Chops
  1. Meanwhile over medium melt the oil in another cast iron skillet.
  2. Pat the pork chops dry, and sprinkle both sides with the garlic salt,
  3. In a small bowl, mix together, coriander, cumin and sugar.
  4. Sprinkle this mixture on one side of the pork chops.
  5. Put the pork chop spice side down into the oil and cook for four minutes. Turn the chops and cook an additional four minutes.
  6. Take the chops off the heat and let them rest for five minutes.
  7. Serve with the sweet potato fries.
