Remember this? I was trying to figure out something different to do with my ground bison yesterday, and I came across this Salisbury steak recipe. I literally have not had Salisbury steak since the 60s when it came in this tray,maybe? Well this recipe looked great, so I adapted it to my bison (I rarely eat ground beef anymore, bison just tastes better). It was delicious. I had some zucchini on hand and made these fried zucchini chips.

A great way to use bison, which is leaner and much more tasty than ground beef.
Combine the bison, egg, almond meal, salt, half of the pepper, mustard and onion powder in a mixing bowl. Mix everything together with your hands until everything is nice and blended, being careful not to over mix.
Form the meat into three large steak-shaped patties, and place on a foil-lined baking sheet. Spray with coconut spray.
Place in the oven and cook for 25 minutes.
While the steaks are cooking, add the broth, mushrooms and rest of the pepper in a small pot, and bring to a simmer.
About 5 minutes before the steaks are done, combine the arrowroot and coconut milk to make a slurry*. Stir this into the broth mixture, and stir until the broth has thickened. Salt and pepper to taste.
Place the steaks on a plate, and cover with the gravy. Serve with mashed cauliflower to mimic potatoes.
*slurry is a starch and liquid combined together then added to cooking liquid to thicken it.
