Paleo Birthday Dinner

This past weekend I made a birthday dinner for two very special friends of mine. Neither of them are on the Paleo lifestyle, but I am, and I cooked them a much raved over Paleo dinner.  The dinner was a massive success with everyone very satisfied, and no one feeling bloated at the end of the meal.

Instructions
  1. Preheat oven to 475° F.
  2. Using the tip of a sharp knife, cut horizontal slits in the fat, covering the "eye" or solid meat portion of the rack, about 2 inches apart in all directions.
  3. Alternately insert pieces of garlic and sprigs of rosemary into the slits.
  4. Using a roasting pan with a rack place the lamb fat side up on the rack.
  5. Roast exactly 25 minutes for a perfectly medium rare rack of lamb.
  6. Let rest for 15 minutes the let the juices reabsorb into the meat.
