Omelette Casserole

I was describing this brunch casserole I have been making for many years. It is a staple in my household. Except for the cheese it is Paleo friendly. Paleo Warriors, I have done this with goat cheese and it’s fine. Maybe you all can come up with some other alternatives.

Instructions
  1. Beat three eggs together with 1 Tbs tarragon, and some salt and pepper
  2. Melt 1 Tbs butter in a omelette pan (skillet).
  3. Pour egg mixture into the pan, and cook until almost done. You don't need to cook it all the way through as it will continue to cook in the oven. Also keep it round.
  4. When the eggs are ready, slide them into the bottom of a buttered casserole (see notes).
  5. Layer the tomatoes and artichokes on top of the eggs.
  6. Layer half of the cheese on top of the vegetables.
  7. Repeat the layering with the rest of the eggs, mushrooms and onions and the rest of the cheese.
  8. Put in a 350º F oven for 30 minutes. Let it rest for at least 15 minutes before serving.
  9. There are a lot of notes with this recipe, since you can make it your own. Also if you assemble this a day ahead of time, you would want to bake it for an hour so that it will heat through.
Recipe Notes

I use a round clear souffle dish for this so you can see the layers. A souffle dish is perfect for this as the sides are straight, but any good casserole will work.

You can add a layer if you are expecting a large crowd.

Let your imagination guide you. I have done this with nothing but leftovers I have had in my refrigerator. Here are a list of ingredients you can mix and match.

Asparagus
Spinach
Broccoli
Olives
Canned tomatoes
Potatoes
Bell Peppers
Bacon
Sausage

You can also use whatever cheese you have. Again, the above recipe is nothing but a guideline. Have fun.
