Fluffy Paleo Sandwich Bread

Sometimes I just want a good sandwich. I recently downloaded  The Paleo Effect: 150 All-Natural Recipes for a Grain-Free, Dairy-Free Lifestyle to my EReader. I found this recipe in the cookbook and tried it. So far this is the most old fashioned bread-like recipe I have come across. It holds up to a sandwich, and has that old fashioned European boule taste and feel. I hope you enjoy it as much as I do.

Instructions
  1. Preheat oven to 350° F.
  2. Combine the arrowroot powder, flaxseed meal, and baking powder in a large bowl.
  3. In a separate bowl, combine the eggs, egg whites, walnut oil, sea salt, and coconut vinegar.
  4. Add the wet ingredients to the dry, and mix until fully incorporated.
  5. Grease a bread loaf pan with oil.
  6. Bake for 30 to 35 minutes or until a toothpick comes out clean.
Recipe Notes

I didn't have Arrowroot powder or coconut vinegar, but my substitutions worked out fine.

You can also make this as muffins. Just cook them 20 to 25 minutes.
