Brussel Sprout Caesar Salad

As promised, here is the Brussel Sprout Caesar Salad. Like I said in my Who Are You post, I don’t particularly like Brussel Sprouts. So, finding a recipe where they taste good is a real find for me. I hope you enjoy this as much as I did.

Instructions
  1. Heat a large sauté pan over medium heat for one minute.
  2. Add olive oil (you can certainly substitute extra-virgin coconut oil) followed by the Brussels sprouts, and cook, stirring occasionally for 7–9 minutes until lightly charred. Remove from heat and transfer to a large bowl.
  3. In a small bowl whisk all the remaining ingredients except the salt, pepper, and parmesan cheese. Taste the dressing, and correct as necessary. Add the sprouts, and toss to combine.
  4. Season with salt and pepper. Sprinkle parmesan cheese all over, and serve warm.

This recipe was featured in People magazine.

Please note that the honey is not in the original recipe. My friend found the dressing a bit “sharp,” and she added sugar to the mixture. When I made it, I too found the dressing “sharp” (probably from the garlic), so since sugar is a no no in the Paleo lifestyle, I added honey. You could also cut back on the garlic.
