Quinoa is not really in the Paleo lifestyle, but it’s probably the least offensive of the “grain/seed” that is not in the diet. But I had some organic quinoa and some sweet italian sausage from my favorite meat market (homemade, not processed) that I wanted to use. I found this recipe, and made it last night. It was so good. If you still eat quinoa, and want more recipes, this recipe came from The Quinoa Cookbook: Nutrition Facts, Cooking Tips, and 116 Superfood Recipes for a Healthy Diet.
I made the full recipe, froze half for later and I have lunch and dinner for a couple of days this week. It is really good.

I was talking with my good friend, Wriston, last evening, and she asked what I had for dinner. When I told her stuffed peppers and the ingredients, she wanted to know if I had posted the recipe. I had not, so here I am posting it. Most stuffed peppers have rice as a filler. I used cauliflower, which I believe enhances the flavor, and doesn’t make you feel bloated later.
Here are some ingredients I used in the peppers.
. . . when you look in the mirror? I see my best friend. Are you your own best friend? Or do you need someone else to validate you? It took me a long time to realize I didn’t need another person to make me whole. I am whole. You are whole. As One, We are whole. We are Holy One.
. . . when you look at another person? Do you know that what you see in another person is a reflection of yourself? So if a person irritates you for any reason, look at yourself, and see if what irritates you in that person is something you have a tendency to do that you aren’t so proud of. The flip side of that coin is if you see beauty in another person then you see the same beauty in yourself. So, I ask you, wouldn’t you rather see the good in every one?
