Spice-Rubbed Pork Chops with Home-Fried Sweet Potatoes

I am at a loss for words today, so I am sharing a recipe for pork chops that I made last night for dinner. This is simple and delicious.

Always cook with organic ingredients. Here are some that I used in this recipe, along with a deal on cast iron skillets.

Italian Sausage and Quinoa One Dish Meal

Quinoa is not really in the Paleo lifestyle, but it’s probably the least offensive of the “grain/seed” that is not in the diet. But I had some organic quinoa and some sweet italian sausage from my favorite meat market (homemade, not processed) that I wanted to use. I found this recipe, and made it last night. It was so good. If you still eat quinoa, and want more recipes, this recipe came from The Quinoa Cookbook: Nutrition Facts, Cooking Tips, and 116 Superfood Recipes for a Healthy Diet.

I made the full recipe, froze half for later and I have lunch and dinner for a couple of days this week. It is really good.

Here are some organic ingredients to use in your version of this dish.

Grain Free Stuffed Bell Peppers

I was talking with my good friend, Wriston, last evening, and she asked what I had for dinner. When I told her stuffed peppers and the ingredients, she wanted to know if I had posted the recipe. I had not, so here I am posting it. Most stuffed peppers have rice as a filler. I used cauliflower, which I believe enhances the flavor, and doesn’t make you feel bloated later.

Here are some ingredients I used in the peppers.

Who Do You See

. . . when you look in the mirror? I see my best friend. Are you your own best friend? Or do you need someone else to validate you? It took me a long time to realize I didn’t need another person to make me whole. I am whole. You are whole. As One, We are whole. We are Holy One.

Who Do You See

two-women-standing-talking. . . when you look at another person? Do you know that what you see in another person is a reflection of yourself? So if a person irritates you for any reason, look at yourself, and see if what irritates you in that person is something you have a tendency to do that you aren’t so proud of. The flip side of that coin is if you see beauty in another person then you see the same beauty in yourself. So, I ask you, wouldn’t you rather see the good in every one? Be Yourself

I was at a Salon this past weekend, where about twelve of us gathered for some lively conversation. The nice thing about this particular Salon is that we are all like minded. One of my friends said, “Be yourself, not what the world wants you to be.” I thought this quote was apt, and fit into my authenticity theme, Who Are You? Continue reading Be Yourself

Paleo Cream of Mushroom Soup

I overslept this morning, and as a friend of mine used to say, “my covers were all wrinkled.” I was going to continue my authenticity theme, but time left me, so I will do that tomorrow. But, I did make some soup for lunch today, and I didn’t use a recipe, but pulled stuff out of my refrigerator, and voila I was creative. So, I am sharing it with you because it turned out pretty darned good, much better than anything you could possibly pull out of a can, and seriously it was just as easy.

Here is a link for a Vitamix, and some organic ingredients you can use in this recipe.

Brussel Sprout Caesar Salad

As promised, here is the Brussel Sprout Caesar Salad. Like I said in my Who Are You post, I don’t particularly like Brussel Sprouts. So, finding a recipe where they taste good is a real find for me. I hope you enjoy this as much as I did.

Here are some organic ingredients you can use in the salad.
